    HEALTHY Moong Dal Khichdi

    Ingredients:

    • 1/4 cup moong dal (split green gram) (soak for 2 – 4 hours)
    • 1/4 cup rice
    • 1/2 cup chopped onions
    • 1/2 cup chopped tomatoes
    • 1/4 cup chopped carrots
    • 1/4 cup chopped beans
    • 1 green chili, finely chopped
    • 1/2 tsp ginger-garlic paste
    • 1/2 tsp cumin seeds
    • 1/2 tsp turmeric powder
    • 1/2 tsp coriander powder
    • 1/2 tsp garam masala
    • 1/2 tsp ghee
    • Salt to taste
    • 2 cups water

    Directions:

    1. Rinse the moong dal and rice under running water.
    2. Heat 1/2 tsp ghee in a pan, add cumin seeds and let them splutter.
    3. Add chopped onions and sauté until golden brown.
    4. Add ginger-garlic paste and green chili, and sauté for 1 minute.
    5. Add chopped tomatoes, turmeric powder, coriander powder, and salt. Cook until tomatoes are softened.
    6. Add chopped carrots and beans, and cook for 2 minutes.
    7. Add moong dal, rice, and 2 cups water. Mix well and bring to a boil.
    8. Reduce the heat, cover, and simmer for 15-20 minutes, or until the dal and rice are cooked and the mixture is thickened.
    9. Stir in garam masala and cook for another 2 minutes.
    10. Serve hot.
