Ingredients:
- 2 Cups Thickly grated carrot
- 1 tsp Ghee
- 1 cup low fat milk
- ¼ cup deseeded and chopped dates ( khajur )
- ¼ tsp cardamom ( elaichi ) powder
- stevia ( optional )

Directions:
- To make low-fat carrot halwa, heat the ghee in a pressure cooker, add the carrots and sauté on a medium flame for 5 minutes.
- Add ¾ cup of milk and dates, mix well and pressure cook for 2 whistles.
- Allow the steam to escape before opening the lid.
- Add the remaining ¼ cup of milk and cardamom powder, mix well and cook on medium flame for 4 minutes, while stirring continuously.
