Ingredients:
- 2 1/2 cups grated bottle gourd (doodhi / lauki)
- 1 tsp ghee
- 1 1/2 cups low-fat milk , 99.7% fat-free
- 1/2 tsp cardamom (elaichi) powder
- 2 tsp stevia ( optional)

Directions:
- To make lauki ka halwa, heat the ghee in a pressure cooker, add the carrots and sauté on a medium flame for 5 minutes.
- Add ¾ cup of milk and dates, mix well and pressure cook for 2 whistles.
- Allow the steam to escape before opening the lid.
- Add the remaining ¼ cup of milk and cardamom powder, mix well and cook on medium flame for 4 minutes, while stirring continuously.
- Serve it warm.
