TOMATO RICE

Comforting anti-inflammatory meal with gut-friendly spices

Ingredients:

  • Cooked basmati rice – 1.5 cups
  • Tomatoes – 2, chopped
  • Onion – 1, chopped
  • Mustard seeds – ½ tsp
  • Turmeric – ¼ tsp
  • Curry leaves – few
  • Ginger garlic paste – 1 tsp
  • Ghee – 1 tsp
  • Salt – to taste

Directions:

  1. Heat ghee and add mustard seeds & curry leaves.
  2. Add onions and sauté till golden.
  3. Add ginger garlic paste & tomatoes. Cook till soft.
  4. Add turmeric and salt.
  5. Mix in cooked rice and cook for 2–3 minutes.
