Quinoa Avocado Salad

Ingredients:

  • 3 tablespoons lime juice
  • 2 tablespoons avocado oil
  • ¾ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper
  • 3 cups cooked quinoa, cooled
  • 2 medium avocados, chopped
  • 1 cup grape tomatoes, halved
  • 1 cup diced cucumber
  • ½ cup chopped fresh cilantro
  • 1 scallion, sliced

Directions:

  1. In a medium bowl, whisk together lime juice, oil, garlic powder, salt, and pepper.
  2. Add quinoa, avocados, tomatoes, cucumber, cilantro, and scallions; gently stir until everything is well combined. Once done, your salad is ready to serve.
