Vegan Poke Bowl

This recipe is curated to provide numerous health benefits while keeping calories to a minimum. It features powerful, nutritious and simple ingredients.

Ingredients:

  • 1 cup cooked brown rice
  • 1/2 cup firm tofu, cubed
  • 1/4 cup edamame beans
  • 1/4 cup shredded carrots
  • 1/4 cup cucumber, diced
  • 1/4 avocado, sliced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • 1/2 tsp grated ginger
  • 1/2 tsp sesame seeds
  • Salt and pepper to taste

Directions:

  • Prepare Tofu: In a small bowl, marinate tofu cubes with soy sauce, sesame oil, rice vinegar, and grated ginger for 10 minutes.
  • Assemble Bowl: In a serving bowl, place cooked brown rice as the base. Arrange marinated tofu, edamame, shredded carrots, cucumber, and avocado on top.
  • Garnish: Sprinkle sesame seeds over the assembled bowl.
  • Serve: Enjoy immediately as a fresh, nutrient-dense meal.
