    Healthy Kodo Millet Upma

    Ingredients:

    • 1/2 cup Kodo millet
    • 1 tbsp oil
    • 1/4 tsp mustard seeds
    • 1/4 tsp cumin seeds
    • 1/4 tsp turmeric powder
    • 1/2 onion (finely chopped)
    • 1/2 tomato (chopped)
    • 1/4 cup peas
    • 1 tbsp grated coconut (optional)
    • Salt to taste

    Directions:

    1. Toast Kodo Millet: Dry roast the Kodo millet for 2-3 minutes until slightly fragrant.
    2. Sauté Spices: Heat oil, add mustard seeds and cumin seeds, and sauté until they splutter.
    3. Add Vegetables: Add onions, tomatoes, and peas, cook until soft.
    4. Cook the Millet: Add the roasted millet, turmeric, and water (1.5 cups), cook until millet is soft.
    5. Serve: Garnish with grated coconut if desired.
