VEGETABLE CLEAR SOUP

This recipe is curated to provide numerous health benefits while keeping calories to a minimum. It features powerful, nutritious and simple ingredients.

Ingredients:

  • 1/4 cup carrot, finely chopped
  • 1/4 cup cabbage, shredded
  • 1/4 cup capsicum, finely chopped
  • 1/4 cup beans, finely chopped
  • 1/2 tsp garlic, minced
  • 1/2 tsp ginger, grated
  • 1 1/2 cups water or vegetable broth
  • Salt and black pepper to taste
  • 1/2 tsp oil (for cooking)
  • Fresh coriander leaves for garnish

Directions:

  1. Heat 1/2 tsp oil in a pan and sauté garlic and ginger until fragrant.
  2. Add all the chopped vegetables and sauté for 2 minutes.
  3. Pour in water or vegetable broth, add salt and black pepper.
  4. Simmer for 5-7 minutes until vegetables are tender.
  5. Garnish with fresh coriander leaves and serve warm.
