TOMATO SOUP

This recipe is curated to provide numerous health benefits while keeping calories to a minimum. It features powerful, nutritious and simple ingredients.

Ingredients:

  • 2 medium tomatoes, chopped
  • 1/4 onion, finely chopped
  • 1/2 tsp garlic, minced
  • 1/2 cup water
  • 1/4 tsp black pepper
  • Salt to taste
  • 1/2 tsp oil (for cooking)
  • Fresh basil or coriander leaves for garnish

Directions:

  1. Heat 1/2 tsp oil in a pan, sauté onions and garlic until soft.
  2. Add tomatoes and cook for 3-4 minutes.
  3. Blend the mixture and strain for a smooth texture.
  4. Return to the pan, add water, salt, and black pepper, and simmer for 5 minutes.
  5. Garnish with fresh basil or coriander leaves and serve warm.
