CHICKEN MINESTRONE SOUP

This recipe is curated to provide numerous health benefits while keeping calories to a minimum. It features powerful, nutritious and simple ingredients.

Ingredients:

  • 75g chicken breast, diced
  • 1/4 cup mixed vegetables (carrots, beans, zucchini)
  • 1/4 cup canned or boiled kidney beans
  • 1/4 cup diced tomatoes
  • 1/4 cup whole wheat pasta
  • 1 1/2 cups chicken broth
  • 1/2 tsp garlic, minced
  • Salt and black pepper to taste
  • 1/2 tsp oil (for cooking)

Directions:

  1. Heat 1/2 tsp oil in a pot, sauté garlic, chicken, and vegetables.
  2. Add tomatoes, kidney beans, pasta, and chicken broth.
  3. Simmer for 10-12 minutes until pasta is cooked.
  4. Add salt and black pepper, mix well.
  5. Serve warm.
