SWEET POTATO PIZZA

Ingredients:
- 1 medium sweet potato
- 2 tablespoons tomato sauce (home-made)
- 1/4 cup shredded low-fat mozzarella cheese
- 1/4 cup diced bell peppers (red, green, or yellow)
- 1/4 cup sliced mushrooms
- 1/4 cup chopped spinach
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- Olive oil spray
Directions:
- Prepare Sweet Potato Base: Preheat the oven to 400°F (200°C). Wash the sweet potato thoroughly and slice it lengthwise into 1/2-inch thick slices. You should get about 4 slices.
- Bake Sweet Potato Slices: Place the sweet potato slices on a baking sheet lined with parchment paper. Lightly spray both sides with olive oil and season with a pinch of salt and pepper. Bake in the preheated oven for 20 minutes, flipping halfway through, until tender and slightly crispy.
- Add Toppings: Remove the baked sweet potato slices from the oven. Spread a thin layer of tomato sauce on each slice, then sprinkle with shredded mozzarella cheese. Top with diced bell peppers, sliced mushrooms, and chopped spinach. Sprinkle dried oregano over the top.
- Bake Again: Return the topped sweet potato slices to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Serve: Remove from the oven and let cool slightly before serving. Enjoy your healthy sweet potato pizzas warm.
