SWEET POTATO PIZZA

Ingredients:

  • 1 medium sweet potato
  • 2 tablespoons tomato sauce (home-made) 
  • 1/4 cup shredded low-fat mozzarella cheese
  • 1/4 cup diced bell peppers (red, green, or yellow)
  • 1/4 cup sliced mushrooms
  • 1/4 cup chopped spinach
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil spray

Directions:

  1. Prepare Sweet Potato Base: Preheat the oven to 400°F (200°C). Wash the sweet potato thoroughly and slice it lengthwise into 1/2-inch thick slices. You should get about 4 slices.
  2. Bake Sweet Potato Slices: Place the sweet potato slices on a baking sheet lined with parchment paper. Lightly spray both sides with olive oil and season with a pinch of salt and pepper. Bake in the preheated oven for 20 minutes, flipping halfway through, until tender and slightly crispy.
  3. Add Toppings: Remove the baked sweet potato slices from the oven. Spread a thin layer of tomato sauce on each slice, then sprinkle with shredded mozzarella cheese. Top with diced bell peppers, sliced mushrooms, and chopped spinach. Sprinkle dried oregano over the top.
  4. Bake Again: Return the topped sweet potato slices to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  5. Serve: Remove from the oven and let cool slightly before serving. Enjoy your healthy sweet potato pizzas warm.
