SPINACH FETA CHEESE EGG OMELETTE

  • 2 large eggs
  • 1 cup fresh spinach leaves
  • 1/4 cup feta cheese, crumbled
  • 1 tablespoon olive oil

Directions:

  1. Sauté Spinach: Heat olive oil in a non-stick skillet over medium heat. Add spinach leaves and cook until wilted, about 1-2 minutes. Remove spinach from the skillet and set aside.
  2. Prepare Eggs: In a bowl, beat the eggs with a pinch of salt and pepper until well combined.
  3. Cook Omelette: Pour the beaten eggs into the same skillet over medium heat. Let them cook undisturbed for about 2 minutes, or until the edges start to set.
  4. Add Fillings: Evenly distribute the sautéed spinach and crumbled feta cheese over one half of the omelette.
  5. Fold and Serve: Gently fold the other half of the omelette over the fillings. Cook for an additional minute to allow the cheese to soften. Slide the omelette onto a plate and serve warm.
