SPINACH FETA CHEESE EGG OMELETTE

Ingredients:
- 2 large eggs
- 1 cup fresh spinach leaves
- 1/4 cup feta cheese, crumbled
- 1 tablespoon olive oil
- Salt and pepper to taste
Directions:
- Sauté Spinach: Heat olive oil in a non-stick skillet over medium heat. Add spinach leaves and cook until wilted, about 1-2 minutes. Remove spinach from the skillet and set aside.
- Prepare Eggs: In a bowl, beat the eggs with a pinch of salt and pepper until well combined.
- Cook Omelette: Pour the beaten eggs into the same skillet over medium heat. Let them cook undisturbed for about 2 minutes, or until the edges start to set.
- Add Fillings: Evenly distribute the sautéed spinach and crumbled feta cheese over one half of the omelette.
- Fold and Serve: Gently fold the other half of the omelette over the fillings. Cook for an additional minute to allow the cheese to soften. Slide the omelette onto a plate and serve warm.
