Raw Spiralized Zucchini Noodles with Tomatoes and Pesto

Ingredients:

  • 2 medium zucchinis
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil pesto
  • 1 tablespoon extra-virgin olive oil

  • Optional: Grated Parmesan cheese for garnish

Directions:

  1. Prepare Zucchini Noodles: Using a spiralizer, create noodles from the zucchinis. If you don’t have a spiralizer, a julienne peeler or mandoline can be used as alternatives.
  2. Combine Ingredients: In a large mixing bowl, toss the zucchini noodles with the cherry tomatoes and pesto until evenly coated.
  3. Season: Drizzle with olive oil, then add salt and freshly ground black pepper to taste. Toss gently to combine.
  4. Serve: Transfer to a serving plate. If desired, sprinkle with grated Parmesan cheese. Enjoy immediately.
