Ingredients:
- 2 medium zucchinis
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil pesto
- 1 tablespoon extra-virgin olive oil
- Salt and freshly ground black pepper to taste
- Optional: Grated Parmesan cheese for garnish
Directions:
- Prepare Zucchini Noodles: Using a spiralizer, create noodles from the zucchinis. If you don’t have a spiralizer, a julienne peeler or mandoline can be used as alternatives.
- Combine Ingredients: In a large mixing bowl, toss the zucchini noodles with the cherry tomatoes and pesto until evenly coated.
- Season: Drizzle with olive oil, then add salt and freshly ground black pepper to taste. Toss gently to combine.
- Serve: Transfer to a serving plate. If desired, sprinkle with grated Parmesan cheese. Enjoy immediately.
