Chicken Patties

  • 100g ground chicken breast
  • 1/4 cup rolled oats (processed into finer crumbs)
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 tbsp fresh parsley, chopped
  • 1 egg white
  • Salt and pepper to taste
  • 1 tbsp olive oil for cooking

Directions:

  1. Prepare Oat Crumbs: Pulse rolled oats in a blender or food processor until they reach a breadcrumb-like consistency. 
  2. Combine Ingredients: In a bowl, mix ground chicken, chopped onion, minced garlic, chopped parsley, egg white, salt, and pepper until well combined.
  3. Form Patties: Divide the mixture into equal portions and shape into patties.
  4. Coat with Oats: Dredge each patty in the processed oats, ensuring an even coating.
  5. Cook Patties: Heat olive oil in a non-stick skillet over medium heat. Place the oat-coated patties in the skillet and cook for 4-5 minutes on each side, or until golden brown and cooked through.
  6. Serve: Enjoy the patties hot, paired with a side salad or steamed vegetables for a balanced meal.
