Beans And Veggie Taco Bowl

Ingredients:

  • 1 teaspoon olive oil
  • ½ green bell pepper, cored and sliced
  • ½ red onion, sliced
  • ½ tsp salt
  • ½ cup cooked brown rice
  • ¼ cup canned black beans
  • ¼ cup shredded sharp Cheddar cheese (1 oz.)
  • ¼ cup home- made salsa
  • 2 tablespoons Chopped fresh cilantro, lime wedges and hot sauce for serving

Directions:

  1. Heat oil in a pan over medium heat.
  2. Add bell pepper and onion, then add salt, stirring frequently, until the vegetables are crisp-tender, for about 5 to 8 minutes.
  3. Place rice and beans in a bowl, then top with the cooked vegetables, cheese,  salsa, and cilantro.
  4. Serve with lime wedges and hot sauce, if preferred.

Note:

The quantity of ingredients may be adjusted according to the number of individuals being served. Additionally, you have the flexibility to modify the style and make alterations to the listed ingredients and recipe as desired.
