Ingredients:
- 1 teaspoon olive oil
- ½ green bell pepper, cored and sliced
- ½ red onion, sliced
- ½ tsp salt
- ½ cup cooked brown rice
- ¼ cup canned black beans
- ¼ cup shredded sharp Cheddar cheese (1 oz.)
- ¼ cup home- made salsa
- 2 tablespoons Chopped fresh cilantro, lime wedges and hot sauce for serving
Directions:
- Heat oil in a pan over medium heat.
- Add bell pepper and onion, then add salt, stirring frequently, until the vegetables are crisp-tender, for about 5 to 8 minutes.
- Place rice and beans in a bowl, then top with the cooked vegetables, cheese, salsa, and cilantro.
- Serve with lime wedges and hot sauce, if preferred.
