Tofu & Spinach Patties

Ingredients:

  • ½ cup crumbled tofu
  • ¼ cup chopped spinach (blanched and squeezed)
  • 1 tbsp grated carrot
  • 1 tbsp besan (gram flour) or oats
  • Spices: salt, pepper, cumin, garlic powder
  • 1 tsp olive oil

Directions:

  1.  Mix: In a bowl, combine tofu, spinach, carrot, flour, and spices.
  2. Shape: Form into small patties.
  3. Cook: Heat oil and pan-fry on medium heat until golden on both sides.
  4. Serve: Best served warm with mint dip.
