Ingredients:
- For the crust:
- 1 whole wheat tortilla or flatbread (8-10 inches) (no refined flour)
- 1/2 tsp olive oil
- For the toppings:
- 1/4 cup tomato sauce (no added sugar) (home-made)
- 1/2 cup shredded part-skim mozzarella cheese
- 1/4 cup sliced bell peppers
- 1/4 cup sliced mushrooms
- 1/4 cup sliced cherry tomatoes
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- Salt and pepper to taste
Directions:
- Preheat oven: Preheat your oven to 400°F (200°C).
- Prepare the crust: Brush the whole wheat tortilla or flatbread lightly with olive oil. Place it on a baking sheet or pizza stone.
- Add the sauce: Spread the tomato sauce evenly over the tortilla, leaving a small border around the edges.
- Add toppings: Sprinkle the shredded mozzarella cheese evenly over the sauce. Top with sliced bell peppers, mushrooms and cherry tomatoes. Season with dried oregano, basil, salt, and pepper.
- Bake: Bake in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly and the edges of the crust are crisp.
- Serve: Remove from the oven and let it cool for a few minutes before slicing and serving.
