Ingredients:
- 3 Egg Whites
- 1/2 teaspoon ground black pepper
- 1/2 cup chopped baby spinach leaves
- 1/2 cup chopped tomatoes
- 1/2 tbsp feta cheese

Directions:
- Take a non-stick pan and spread a little oil over medium heat until hot.
- Add Egg sprinkle with pepper. Cook for 1 to 2 minutes or until Egg begins to set.
- Gently lift edges and tilt to allow uncooked Egg Beaters to run underneath. Cook 2 to 3 minutes more or until set.
- Top half of omelet with spinach, tomatoes, and feta cheese. Fold remaining half of omelet over filling
