QUINOA VEGETABLE PULAV

Nutrients

Ingredients:

  • Quinoa – 30gms 
  • Onions, finely chopped – 1 small 
  • Oil – ½ tsp
  • Salt – use minimum, to taste
  • Cumin seeds (jeera) – ½ tsp 
  • Cloves – 1
  • Bay leaf -1 
  • Green cardamom pods, crushed – 1 (optional)
  • Garlic, minced – ½ tsp
  • Ginger – ½ tsp
  • Mixed vegetables ( carrot, peas,tomato,red&yellow bell peppers ) – 1 cup
  • Mint leaves/coriander leaves – to garnish

Notes:

  • The number of ingredients can change as per the number of people being served.
  • If you like you can change the style and make modifications to the mentioned ingredients and recipe.

Directions:

  1. Heat the oil in a pan, preferably non-stick. 
  2. Add the cumin seeds and when they sizzle, add the whole spices such as cardamom, cloves, bay leaf. Fry for 10 seconds and then add the chopped onions. 
  3.  Fry until just soft (about 3 mins) and then add the ginger and garlic.
  4. Sauté for 2 mins. Add the vegetables now and sauté for 4-5 mins until the vegetables are almost cooked.
  5. Pressure cook the quinoa. Once cooked, add in the prepared mixture and cook for another 5-10 minutes until done. 
  6. The rest of the vegetables should be done now too. Garnish with mint or coriander leaves and serve hot with curd.
