PAV BHAJI

This recipe is curated to provide numerous health benefits while keeping calories to a minimum. It features powerful, nutritious and simple ingredients.

Ingredients:

  • 1 cup mixed vegetables (potatoes, carrots, peas, bell peppers), chopped
  • 1/2 cup chopped onions
  • 1 small tomato, chopped
  • 1/2 tsp ginger-garlic paste
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1/2 tsp pav bhaji masala
  • 1/4 tsp turmeric powder
  • 1/4 tsp red chili powder
  • 1/2 tsp ghee
  • 1/2 cup water (adjust as needed)
  • Salt to taste
  • 1 tbsp chopped coriander leaves for garnish
  • 1 lemon wedge for serving

Directions:

  1. Heat 1/2 tsp ghee in a pan, add mustard seeds and cumin seeds, and let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Add ginger-garlic paste and sauté for 1 minute.
  4. Add chopped tomatoes, turmeric powder, red chili powder, and pav bhaji masala. Cook until tomatoes are softened and the oil starts to separate.
  5. Add chopped mixed vegetables and 1/2 cup water. Stir well and cook for 15-20 minutes until the vegetables are tender and the flavors are well combined.
  6. Mash the vegetables slightly to achieve a thick, semi-smooth consistency.
  7. Garnish with chopped coriander leaves and serve hot with a lemon wedge on the side.
