PALAK PANEER

This recipe is curated to provide numerous health benefits while keeping calories to a minimum. It features powerful, nutritious and simple ingredients.

Ingredients:

  • 80g paneer (cottage cheese), cubed
  • 2 cups spinach leaves, chopped
  • 1/2 cup chopped onions
  • 1/2 cup chopped tomatoes
  • 1 green chili, finely chopped
  • 1/2 tsp ginger-garlic paste
  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 1/2 tsp coriander powder
  • 1/2 tsp ghee
  • Salt to taste
  • 1/4 cup water (adjust as needed)

Directions:

  1. Blanch spinach leaves in boiling water for 2 minutes. Drain and cool. Blend into a smooth puree.
  2. Heat 1/2 tsp ghee in a pan, add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until golden brown.
  4. Add ginger-garlic paste and green chili, and sauté for 1 minute.
  5. Add chopped tomatoes, turmeric powder, red chili powder, corriander powder and salt. Cook until tomatoes are softened.
  6. Add the spinach puree and cook for 5 minutes, stirring occasionally.
  7. Add paneer cubes and garam masala. Stir well and cook for another 5 minutes, until the paneer is heated through.
  8. Serve hot with a garnish of fresh coriander.
