This recipe is curated to provide numerous health benefits while keeping calories to a minimum. It features powerful, nutritious and simple ingredients.
Ingredients:
- 80g paneer (cottage cheese), cubed
- 2 cups spinach leaves, chopped
- 1/2 cup chopped onions
- 1/2 cup chopped tomatoes
- 1 green chili, finely chopped
- 1/2 tsp ginger-garlic paste
- 1/2 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- 1/2 tsp coriander powder
- 1/2 tsp ghee
- Salt to taste
- 1/4 cup water (adjust as needed)
Directions:
- Blanch spinach leaves in boiling water for 2 minutes. Drain and cool. Blend into a smooth puree.
- Heat 1/2 tsp ghee in a pan, add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and green chili, and sauté for 1 minute.
- Add chopped tomatoes, turmeric powder, red chili powder, corriander powder and salt. Cook until tomatoes are softened.
- Add the spinach puree and cook for 5 minutes, stirring occasionally.
- Add paneer cubes and garam masala. Stir well and cook for another 5 minutes, until the paneer is heated through.
- Serve hot with a garnish of fresh coriander.
