Ingredients:
- 1.5 tbsp chia seeds
- 1/2 cup unsweetened almond milk (or low-fat milk)
- 1/4 cup fresh mango puree
- 1 tsp honey or maple syrup (optional)
- 1/4 tsp vanilla extract
- A few mango chunks for topping
Directions:
- Mix Chia & Milk: In a small bowl, combine chia seeds and almond milk. Stir well to avoid lumps.
- Add Sweetener & Vanilla: Stir in honey or maple syrup and vanilla extract, if using.
- Let It Set: Cover the bowl and refrigerate for at least 2 hours or overnight until the chia seeds expand and form a pudding-like consistency.
- Add Mango: Once set, mix in the fresh mango puree.
- Top & Serve: Garnish with a few mango chunks and serve chilled.
