Healthy Lentil Pasta in Arrabbiata Sauce

Ingredients:

  • 75g dry red lentil pasta
  • 1/2 cup crushed tomatoes (low sodium, canned)
  • 1 teaspoon tomato paste
  • 1 clove garlic, minced
  • 1/4 small onion, finely chopped
  • 1/2 teaspoon red chili flakes (adjust to taste)
  • 1 teaspoon extra virgin olive oil
  • Salt, to taste
  • Fresh basil leaves, for garnish

Directions:

  • Cook Pasta: Bring a pot of salted water to a boil. Add the red lentil pasta and cook according to package directions until al dente. Drain and set aside.
  • Sauté Aromatics: In a small saucepan, heat olive oil over medium heat. Add the minced garlic and chopped onion; sauté until soft and translucent (about 2–3 minutes).
  • Prepare Sauce: Stir in the red chili flakes and tomato paste; cook for 1 minute until fragrant. Add the crushed tomatoes and a pinch of salt. Simmer for 5–7 minutes, stirring occasionally, until the flavors meld and the sauce slightly thickens.
  • Combine: Add the drained pasta to the sauce and toss gently to coat. Allow the pasta to heat through for another 1–2 minutes.
  • Garnish & Serve: Remove from heat, garnish with fresh basil leaves, and serve immediately.
