Healthy Edamame Hummus

This recipe is curated to provide numerous health benefits while keeping calories to a minimum. It features powerful, nutritious and simple ingredients.

Ingredients:

  • ½ cup boiled edamame
  • 1 tbsp tahini
  • 1 clove garlic
  • Juice of ½ lemon
  • Salt to taste
  • 1 tsp olive oil
  • 2 tbsp water (for texture)

Directions:

  • Blend: Add all ingredients to a blender – edamame, tahini, garlic, lemon juice, salt, olive oil, and water.
  • Process: Blend until smooth and creamy.
  • Adjust: Add extra lemon juice or water if needed.
  • Serve: Scoop with veggie sticks or use as a toast spread.
