- 1 cup roughly chopped avocado
- 1/2 cup sliced capsicum
- 1/2 cup tomato strips ,
- 1 cup sliced and blanched baby corn
- 1/2 cup cucumber strips
- To Be Mixed Into A Dressing
- 1 tsp honey
- 3/4 tbsp lemon juice
- 2 tsp finely chopped mint leaves
- salt and freshly ground black pepper to taste
