- 1/4 cup whole wheat flour
- 2 tbsp almond flour
- 2 tbsp honey or maple syrup
- 1 tbsp olive oil or coconut oil
- 1/4 cup chopped dried plums (prunes)
- 1/4 tsp cinnamon powder
- 1/8 tsp nutmeg powder
- 1/8 tsp baking powder
- 1/8 tsp baking soda
- 2 tbsp unsweetened applesauce
- 1 tbsp chopped walnuts (optional)
- A pinch of salt
- 1 tbsp orange juice (optional for extra flavor)
Directions:
- Preheat Oven: Preheat the oven to 350°F (175°C). Grease a small cake tin or ramekin.
- Mix Dry Ingredients: In a bowl, whisk together the whole wheat flour, almond flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Combine Wet Ingredients: In another bowl, mix the honey, oil, applesauce, and orange juice (if using).
- Fold in Plums: Gradually add the wet ingredients to the dry ingredients. Fold in the chopped plums and walnuts.
- Bake: Pour the batter into the prepared tin and bake for 20-25 minutes or until a toothpick comes out clean.
- Cool and Serve: Let the cake cool before slicing and serving.
