Healthy Christmas Plum Cake

  • 1/4 cup whole wheat flour
  • 2 tbsp almond flour
  • 2 tbsp honey or maple syrup
  • 1 tbsp olive oil or coconut oil
  • 1/4 cup chopped dried plums (prunes)
  • 1/4 tsp cinnamon powder
  • 1/8 tsp nutmeg powder
  • 1/8 tsp baking powder
  • 1/8 tsp baking soda
  • 2 tbsp unsweetened applesauce
  • 1 tbsp chopped walnuts (optional)
  • A pinch of salt
  • 1 tbsp orange juice (optional for extra flavor)

Directions:

  1. Preheat Oven: Preheat the oven to 350°F (175°C). Grease a small cake tin or ramekin.
  2. Mix Dry Ingredients: In a bowl, whisk together the whole wheat flour, almond flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Combine Wet Ingredients: In another bowl, mix the honey, oil, applesauce, and orange juice (if using).
  4. Fold in Plums: Gradually add the wet ingredients to the dry ingredients. Fold in the chopped plums and walnuts.
  5. Bake: Pour the batter into the prepared tin and bake for 20-25 minutes or until a toothpick comes out clean.
  6. Cool and Serve: Let the cake cool before slicing and serving.
