Chicken Poke Bowl

Ingredients:

  • 100g grilled chicken breast, sliced
  • 50g cucumber, sliced
  • 50g shredded carrots
  • 30g avocado, diced
  • 50g cooked quinoa
  • 1 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • 1/2 tsp sesame seeds
  • 1/2 lime, sliced (for garnish)
  • Optional: small handful of seaweed, sliced green onions, or pickled ginger

Directions:

  1. Cook quinoa: Prepare the quinoa according to package instructions. Let it cool.
  2. Grill chicken: Season the chicken breast with a pinch of salt and pepper. Grill until fully cooked, then slice into strips.
  3. Prepare vegetables: Slice the cucumber, shred the carrots, and dice the avocado.
  4. Assemble the bowl: In a bowl, add the quinoa as the base. Layer the grilled chicken, cucumber, carrots, and avocado on top.
  5. Make the dressing: Mix the soy sauce, sesame oil, and rice vinegar in a small bowl.
  6. Drizzle and garnish: Drizzle the dressing over the bowl, sprinkle with sesame seeds, and garnish with lime slices.
  7. Serve: Enjoy your healthy and balanced chicken poke bowl!
