CARROT TOMATO SOUP

Ingredients:

  • 1/2 cup carrots, chopped
  • 1 medium tomato, chopped
  • 1/4 onion, finely chopped
  • 1/2 tsp garlic, minced
  • 1 cup water
  • Salt and black pepper to taste
  • 1/2 tsp oil (for cooking)

Directions:

  1. Heat 1/2 tsp oil, sauté onions, garlic, carrots, and tomatoes.
  2. Add water, cover, and cook for 10 minutes.
  3. Blend the mixture, strain if needed.
  4. Return to heat, add salt and black pepper, and simmer for 3 minutes.
  5. Serve warm.
