ZUCCHINI NOODLES WITH AVOCADO PESTO AND SHRIMP

Ingredients:

  • 1 medium zucchini, spiralized into noodles
  • 8 large shrimp, peeled and deveined
  • 1/2 avocado
  • 1/4 cup fresh basil leaves
  • 1 tbsp lemon juice
  • 1 clove garlic
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp pine nuts or chopped walnuts (optional, for garnish)

Directions:

  1. Prepare the pesto: In a food processor, combine the avocado, basil, lemon juice, garlic, and olive oil. Blend until smooth. Season with salt and pepper to taste.
  2. Cook the shrimp: Heat a non-stick skillet over medium heat. Add the shrimp and cook for 4-5 minutes per side, or until they turn pink and are cooked through. Season with a pinch of salt and pepper.
  3. Prepare the zucchini noodles: While the shrimp is cooking, lightly sauté the zucchini noodles in the same skillet for 2-3 minutes until they are just tender but still crisp. Alternatively, you can leave them raw if you prefer.
  4. Combine and serve: Toss the zucchini noodles with the avocado pesto until well coated. Top with the cooked shrimp and garnish with pine nuts or walnuts if desired. Serve immediately.
