HEALTHY LOW FAT BUTTER CHICKEN

This recipe is curated to provide numerous health benefits while keeping calories to a minimum. It features powerful, nutritious and simple ingredients.

Ingredients:

  • 100g chicken breast, cut into bite-sized pieces
  • 1/4 cup plain low-fat Greek yogurt
  • 1/2 tbsp lemon juice
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional)
  • 1/2 tbsp olive oil
  • 1/4 cup tomato puree
  • 1/4 cup low-fat coconut milk
  • 1 clove garlic, minced
  • 1/2 inch ginger, minced
  • Salt and pepper to taste
  • Optional: fresh cilantro, chopped (for garnish)

Directions:

  1. Marinate the chicken: In a bowl, mix the yogurt, lemon juice, garam masala, turmeric, cumin, paprika, cayenne pepper, and salt. Add the chicken pieces, coat them well, and marinate for at least 15 minutes.
  2. Cook the chicken: Heat olive oil in a pan over medium heat. Add the marinated chicken and cook until browned on all sides and fully cooked through. Remove the chicken from the pan and set aside.
  3. Prepare the sauce: In the same pan, add the minced garlic and ginger. Sauté for 1-2 minutes until fragrant. Add the tomato puree and cook for another 3-4 minutes.
  4. Simmer the sauce: Stir in the low-fat coconut milk and bring the sauce to a gentle simmer. Let it cook for 5 minutes, allowing the flavors to meld.
  5. Combine and serve: Return the cooked chicken to the pan and stir to coat it with the sauce. Simmer for an additional 2-3 minutes until the chicken is heated through.
  6. Garnish and serve: Optional—garnish with chopped cilantro for a fresh finish. Serve hot and enjoy your healthy low-fat butter chicken!
