BROCCOLI SOUP

Ingredients:

  • Broccoli – 1 cup
  • Onion [chopped finely] – 30 gm
  • Garlic [chopped finely] – 2 cloves
  • Low fat milk – 2tbsp
  • Black pepper powder – 1/4 tsp
  • Oregano powder – 1/4 Tsp
  • Oil – 1 Tsp
  • Salt to taste
  • Water as needed

Notes:

  • The number of ingredients can change as per the number of people being served.
  • If you like you can change the style and make modifications to the mentioned ingredients and recipe.

Directions:

  1. Wash and roughly dice broccoli floret.
  2. In a pan/cooker, add oil. Sauté onion, garlic, and pepper. Let the onion turn translucent.
  3. Later add broccoli floret. Sauté for 1-2 minutes.
  4. Add adequate water and pressure cook for 2 whistles. Once the pressure releases. open the cooker and allow the veggies to cool a bit before pureeing.
  5. Drain the veggies. Don’t discard the water. Keep it aside to use later. Retain few broccoli florets too. You can chop a bit and garnish the soup. Puree the remaining veggies into a smooth paste using a blender.
  6. Transfer the broccoli puree to a pan. Add the drained water kept aside before into the soup .. mix. Let the soup boil a bit.
  7. At this point, add milk .. mix and simmer well on low flame. If it’s thick .. can add some water too to get the required consistency.
  8. Add some oregano powder, salt, and pepper powder ( optional ) for seasoning and mix well. Serve hot.
