QUINOA APPLE KHEER

Ingredients:
- 1 ½ cups cooked quinoa
- 1 teaspoon Ghee
- 1 Apple finely chopped
- 750 ml Skim milk
- 8-10 Saffron strands
- 1 teaspoon Cardamom crushed
- ¼ cup jaggery/stevia sweetener
- 2 tablespoons Pistachios Chopped
- Apples Sliced for topping
Notes:
- The number of ingredients can change as per the number of people being served.
- If you like you can change the style and make modifications to the mentioned ingredients and recipe.
Directions:
- In a pot add 2 cups water and quinoa and cook it. Quinoa requires more water for cooking so adjust the quantity accordingly.
- Next, heat ghee in a pan on a low flame. Add finely chopped apples and sauté till the apple turns soft.
- Now add the cooked quinoa, cardamom powder, saffron, jaggery/stevia and milk and cook the mixture thoroughly for about 20 minutes. Let it reduce a little if you prefer thick kheer.
- You can serve it hot or allow it to cool at room temperature and then refrigerate it for about 2 hours to enjoy its chilled version.
- Garnish with pistachios and sliced apples.
