Healthy Sweet Potato Veggie Tikkis

This recipe is curated to provide numerous health benefits while keeping calories to a minimum. It features powerful, nutritious and simple ingredients.

Ingredients:

  • 1 medium sweet potato, peeled and boiled
  • 1/4 cup finely chopped carrots
  • 1/4 cup finely chopped peas
  • 1/4 cup finely chopped onions
  • 1/4 tsp cumin powder
  • 1/4 tsp coriander powder
  • 1/4 tsp garam masala
  • 1/4 tsp red chili powder
  • 1 tbsp whole wheat flour (for binding)
  • Salt to taste
  • 1 tsp oil (for shallow frying)
  • Fresh coriander leaves for garnish

Directions:

  1. Mash the boiled sweet potato in a bowl until smooth.
  2. Add chopped carrots, peas, onions, cumin powder, coriander powder, garam masala, red chili powder, salt, and whole wheat flour to the mashed sweet potato. Mix well.
  3. Shape the mixture into small patties (tikkis).
  4. Heat 1 tsp oil in a non-stick pan over medium heat.
  5. Cook the tikkis on both sides until they are golden brown and crispy, about 3-4 minutes per side.
  6. Garnish with fresh coriander leaves and serve hot.
  7. Bonus point: You can coat the tikkis in Oats flour (add some peri – peri mix spice) before you put it on the pan for extra crust
