Spinach Salad With Quinoa ,Chickpeas And Berries

Ingredients:

  • 3 cups fresh baby spinach or mixed greens
  • 1 cup cooked quinoa
  • 1 Tsp salt
  • ⅔cup chopped cooked chicken breast
  • ½ cup fresh blueberries or sliced fresh strawberries
  • ½ ounce crumbled feta cheese (2 Tbsp.)
  • 2 tablespoons sliced almonds, toasted
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon white vinegar
  • ¼ teaspoon mustard sauce
  • ½ teaspoon honey (organic)

Directions:

  1. In two 1-quart airtight containers, layer spinach, quinoa, and chicken. Add berries, cheese, and almonds on top of each salad. You can refrigerate it.
  2. When ready to serve, whisk together – salt, oil, vinegar, mustard, honey, and salt in a small bowl. Pour the dressing evenly over each salad and toss to coat. Serve immediately
