Spinach Salad With Quinoa ,Chickpeas And Berries

Ingredients:
- 3 cups fresh baby spinach or mixed greens
- 1 cup cooked quinoa
- 1 Tsp salt
- ⅔cup chopped cooked chicken breast
- ½ cup fresh blueberries or sliced fresh strawberries
- ½ ounce crumbled feta cheese (2 Tbsp.)
- 2 tablespoons sliced almonds, toasted
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon white vinegar
- ¼ teaspoon mustard sauce
- ½ teaspoon honey (organic)
Directions:
- In two 1-quart airtight containers, layer spinach, quinoa, and chicken. Add berries, cheese, and almonds on top of each salad. You can refrigerate it.
- When ready to serve, whisk together – salt, oil, vinegar, mustard, honey, and salt in a small bowl. Pour the dressing evenly over each salad and toss to coat. Serve immediately
