Healthy Samak Ki Khichdi

This recipe is curated to provide numerous health benefits while keeping calories to a minimum. It features powerful, nutritious and simple ingredients.

Ingredients:

  • 1/2 cup Samak rice (barnyard millet)
  • 1 tbsp ghee
  • 1/4 tsp cumin seeds
  • 1/2 tsp ginger (grated)
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 1/2 cup mixed vegetables (carrot, peas, beans)
  • 1/2 tsp lemon juice (optional)

Directions:

  1. Cook the Samak Rice: Rinse the Samak rice thoroughly and set aside.
  2. Sauté Spices: Heat ghee in a pan, add cumin seeds, and sauté until they splutter.
  3. Add Vegetables and Spices: Add grated ginger, turmeric powder, and mixed vegetables, sauté for 2 minutes.
  4. Cook the Khichdi: Add the rinsed Samak rice and water (1.5 cups), cook until rice is tender and the water is absorbed.
  5. Serve: Add lemon juice if desired and enjoy!
