Healthy Samak Ki Khichdi

Ingredients:
- 1/2 cup Samak rice (barnyard millet)
- 1 tbsp ghee
- 1/4 tsp cumin seeds
- 1/2 tsp ginger (grated)
- 1/2 tsp turmeric powder
- Salt to taste
- 1/2 cup mixed vegetables (carrot, peas, beans)
- 1/2 tsp lemon juice (optional)
Directions:
- Cook the Samak Rice: Rinse the Samak rice thoroughly and set aside.
- Sauté Spices: Heat ghee in a pan, add cumin seeds, and sauté until they splutter.
- Add Vegetables and Spices: Add grated ginger, turmeric powder, and mixed vegetables, sauté for 2 minutes.
- Cook the Khichdi: Add the rinsed Samak rice and water (1.5 cups), cook until rice is tender and the water is absorbed.
- Serve: Add lemon juice if desired and enjoy!
