HEALTHY PESTO CHICKEN WITH VEGGIES

Ingredients:

  • 100g chicken breast, boneless and skinless
  • 1 tbsp basil pesto (store-bought or homemade)
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup bell peppers, sliced
  • 1/2 cup zucchini, sliced
  • 1/2 tbsp olive oil
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Optional: fresh basil for garnish

Directions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C).
  2. Season the chicken: Rub the chicken breast with 1/2 tablespoon of olive oil, garlic powder, salt, and pepper. Spread the pesto evenly over the top of the chicken.
  3. Prepare the vegetables: Toss the cherry tomatoes, bell peppers, and zucchini with the remaining 1/2 tablespoon of olive oil, salt, and pepper. Arrange the vegetables around the chicken on a baking sheet.
  4. Bake: Place the chicken and vegetables in the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C), and the vegetables are tender.
  5. Garnish and serve: Optional—garnish with fresh basil if desired. Serve hot and enjoy your healthy pesto chicken with veggies!
