Chickpea Mint Salad

Nutrients

Ingredients:

  • 2 cups soaked, drained and boiled kabuli chana (white chickpeas)
  • 3/4 cup tomato chopped
  • 1 cup cucumber chopped
  • 3/4 cup chopped spring onion whites and greens
  • salt to taste
For The Mint dressing
  • 1 cup chopped mint leaves
  • 1/2 cup chopped coriander
  • 2 tbsp curd
  • salt to taste
  • freshly ground black pepper to taste

Notes:

  • The number of ingredients can change as per the number of people being served.
  • If you like you can change the style and make modifications to the mentioned ingredients and recipe.

Directions:

  1. For the mint dressing: Combine all the ingredients and blend in a mixer to a smooth paste using a little water. Keep aside.
  2. Method: Combine all the ingredients in a bowl, add the mint dressing and toss well.
