BROCCOLI SOUP

Ingredients:

  • Broccoli – 1 cup
  • Onion [chopped finely] – 30 gm
  • Garlic [chopped finely] – 2 cloves
  • Low fat milk – 2tbsp
  • Black pepper powder – 1/4 tsp
  • Oregano powder – 1/4 Tsp
  • Oil – 1 Tsp
  • Salt to taste
  • Water as needed

Directions:

  1. Heat 1/2 tsp oil, sauté onions, garlic, and broccoli.
  2. Add vegetable broth, cover, and cook for 5 minutes.
  3. Blend slightly for a smooth texture, or leave it chunky.
  4. Add salt and black pepper, mix well.
  5. Serve warm.
