BROCCOLI SOUP

Ingredients:
- Broccoli – 1 cup
- Onion [chopped finely] – 30 gm
- Garlic [chopped finely] – 2 cloves
- Low fat milk – 2tbsp
- Black pepper powder – 1/4 tsp
- Oregano powder – 1/4 Tsp
- Oil – 1 Tsp
- Salt to taste
- Water as needed
Notes:
- The number of ingredients can change as per the number of people being served.
- If you like you can change the style and make modifications to the mentioned ingredients and recipe.
Directions:
- Wash and roughly dice broccoli floret.
- In a pan/cooker, add oil. Sauté onion, garlic, and pepper. Let the onion turn translucent.
- Later add broccoli floret. Sauté for 1-2 minutes.
- Add adequate water and pressure cook for 2 whistles. Once the pressure releases. open the cooker and allow the veggies to cool a bit before pureeing.
- Drain the veggies. Don’t discard the water. Keep it aside to use later. Retain few broccoli florets too. You can chop a bit and garnish the soup. Puree the remaining veggies into a smooth paste using a blender.
- Transfer the broccoli puree to a pan. Add the drained water kept aside before into the soup .. mix. Let the soup boil a bit.
- At this point, add milk .. mix and simmer well on low flame. If it’s thick .. can add some water too to get the required consistency.
- Add some oregano powder, salt, and pepper powder ( optional ) for seasoning and mix well. Serve hot.
