Ingredients:
- Chicken 50g (Shredded)
- Lime juice 1 teaspoon
- Mixed salad leaves 50g
- A handful of coriander, roughly chopped
- Red onion 50g (thinly sliced)
- Chilli 1/2 (thinly sliced)
- Cucumber 1/4 (sliced)
- 1 Tomato
- 1 Tsp Balsamic vinegar
- 1 Tsp Honey

Directions:
- Cover the chicken with cold water, bring to a boil, then cook for 10 mins. Remove from the pan and tear into shreds. Stir together the Balsamic, Honey, and lime juice.
- Place the leaves and coriander in a container, then top with the chicken, tomato, onion, chili, and cucumber. Place the dressing in a separate container and toss through the salad when ready to eat.
