ASIAN CHICKEN SALAD

Ingredients:

  • Chicken 50g (Shredded) 
  • Lime juice 1 teaspoon  
  • Mixed salad leaves 50g 
  • A handful of coriander, roughly chopped 
  • Red onion 50g (thinly sliced) 
  • Chilli 1/2 (thinly sliced) 
  • Cucumber 1/4 (sliced)
  • 1 Tomato
  • 1 Tsp Balsamic vinegar
  • 1 Tsp Honey

Notes:

  • The number of ingredients can change as per the number of people being served.
  • If you like you can change the style and make modifications to the mentioned ingredients and recipe.

Directions:

  1. Cover the chicken with cold water, bring to a boil, then cook for 10 mins. Remove from the pan and tear into shreds. Stir together the Balsamic, Honey, and lime juice.
  2. Place the leaves and coriander in a container, then top with the chicken, tomato, onion, chili, and cucumber. Place the dressing in a separate container and toss through the salad when ready to eat.
