Healthy Chicken Multigrain Sandwich

Ingredients:
- 2 slices of multigrain bread (around 70g total)
- 80g grilled or baked chicken breast (shredded or sliced)
- 1 tbsp low-fat mayonnaise or Greek yogurt
- 1 slice of tomato
- 2 slices of cucumber
- 1 tbsp shredded lettuce
- 1 tbsp sliced bell peppers
- Salt and pepper to taste
- 1 tsp mustard (optional)
Directions:
- Prepare Bread: Lightly toast the multigrain bread slices.
- Prepare Chicken: Mix the shredded chicken with low-fat mayonnaise or Greek yogurt.
- Assemble the Sandwich: Spread the chicken mixture on one slice of bread.
- Layer Vegetables: Add tomato, cucumber, bell peppers, and lettuce on top of the chicken.
- Season: Add salt and pepper to taste, and spread mustard if desired.
- Finish and Serve: Place the second slice of bread on top, cut in half, and serve.
