Healthy Chicken Multigrain Sandwich

Ingredients:

  • 2 slices of multigrain bread (around 70g total)
  • 80g grilled or baked chicken breast (shredded or sliced)
  • 1 tbsp low-fat mayonnaise or Greek yogurt
  • 1 slice of tomato
  • 2 slices of cucumber
  • 1 tbsp shredded lettuce
  • 1 tbsp sliced bell peppers
  • Salt and pepper to taste
  • 1 tsp mustard (optional)

Directions:

  1. Prepare Bread: Lightly toast the multigrain bread slices.
  2. Prepare Chicken: Mix the shredded chicken with low-fat mayonnaise or Greek yogurt.
  3. Assemble the Sandwich: Spread the chicken mixture on one slice of bread.
  4. Layer Vegetables: Add tomato, cucumber, bell peppers, and lettuce on top of the chicken.
  5. Season: Add salt and pepper to taste, and spread mustard if desired.
  6. Finish and Serve: Place the second slice of bread on top, cut in half, and serve.
