HEALTHY PESTO CHICKEN WITH VEGGIES

Ingredients:

  • 100g chicken breast, boneless and skinless
  • 1/4 cup plain low-fat Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp ground cumin
  • 1/4 tsp cayenne pepper (optional, for extra heat)
  • 1 clove garlic, minced
  • 1/2 inch ginger, minced
  • Salt and pepper to taste
  • 1/2 tbsp olive oil
  • Optional: fresh cilantro or chopped green onions for garnish

Directions:

  1. Prepare the marinade: In a bowl, combine the Greek yogurt, lemon juice, chili powder, paprika, cumin, cayenne pepper, garlic, ginger, salt, and pepper.
  2. Marinate the chicken: Coat the chicken breast with the yogurt mixture. Cover and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).
  3. Cook the chicken: Heat olive oil in a pan over medium heat. Remove the chicken from the marinade and cook for about 6-7 minutes on each side, or until fully cooked and golden brown.
  4. Garnish and serve: Optional—garnish with chopped cilantro or green onions. Serve hot and enjoy your healthy spicy yogurt chicken!
