HEALTHY GRILLED CHICKEN WITH VEGGIES

Ingredients:

  • 100g chicken breast, boneless and skinless
  • 1/2 cup bell peppers, sliced
  • 1/2 cup zucchini, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1 tbsp olive oil / 1 tbsp ghee
  • 1 tsp dried Italian herbs or mixed herbs
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Optional: lemon wedges for serving

Directions:

  1. Preheat the grill: Preheat your grill or grill pan over medium-high heat.
  2. Season the chicken: Rub the chicken breast with 1/2 tablespoon of olive oil, dried herbs, garlic powder, salt, and pepper.
  3. Prepare the vegetables: Toss the bell peppers, zucchini, and cherry tomatoes with the remaining 1/2 tablespoon of olive oil, salt, and pepper.
  4. Grill the chicken: Place the chicken on the grill and cook for about 6-7 minutes on each side, or until fully cooked and has grill marks.
  5. Grill the veggies: While the chicken is cooking, place the vegetables on the grill or in a grill basket. Grill for about 5-7 minutes, stirring occasionally, until tender and slightly charred.
