Ingredients:
- 1/2 cup brown poha (flattened rice)
- 1 tbsp oil
- 1/4 tsp mustard seeds
- 1/4 tsp cumin seeds
- 1/4 tsp turmeric powder
- 1/2 onion (chopped)
- 1/4 cup peas
- 1/4 cup carrots (chopped)
- 1/4 cup bell peppers (chopped)
- 1/4 cup beans (chopped)
- Salt to taste
- Fresh coriander leaves for garnish
Directions:
- Soak the Poha: Rinse the poha and let it soak for 5 minutes, then drain excess water.
- Sauté Spices and Vegetables: Heat oil in a pan, add mustard seeds, cumin seeds, and sauté until they splutter. Add chopped onions and cook until soft.
- Add Vegetables: Add peas, carrots, bell peppers, and beans to the pan, cook for 2-3 minutes.
- Cook the Poha: Add turmeric powder, soaked poha, and salt, stir well, and cook for 3-4 minutes.
- Serve: Garnish with fresh coriander leaves and serve hot.
