    Chicken Frankie

    Ingredients:

    • 1 medium Multigrain roti or tortilla (about 8 inches in diameter)
    • 1/2 cup cooked and shredded chicken breast
    • 2 tbsp plain Greek yogurt
    • 1/4 cup diced onions
    • 1/4 cup diced bell peppers
    • 1/4 cup shredded lettuce
    • 1/4 tsp cumin powder
    • 1/4 tsp paprika
    • 1/4 tsp chili powder
    • 1/4 tsp garlic powder
    • Salt and pepper to taste
    • Fresh lemon juice (optional)

    Directions:

    1. Prepare the filling: In a bowl, combine the shredded chicken with Greek yogurt, l 1 tsp light mayonnaise, and home-made tomato paste. Add the cumin powder, paprika, chili powder, garlic powder, salt, and pepper. Mix well until the chicken is evenly coated.
    2. Sauté the vegetables: Heat a non-stick pan over medium heat. Add the diced onions and bell peppers. Sauté until softened, about 3-4 minutes.
    3. Warm the tortilla: Lightly warm the whole wheat tortilla in a pan or microwave until pliable.
    4. Assemble the frankie: Spread the chicken mixture down the center of the tortilla. Top with sautéed vegetables and shredded lettuce.
    5. Roll it up: Fold in the sides of the tortilla and roll it up tightly from the bottom.
