Ingredients:

  • Fresh mustard leaves (sarson) 1 Katori (chopped)
  • Spinach leaves (palak) 1 Katori (chopped)
  • Bathua (chopped)(Optional) ½ Katori
  • Oatmeal 1 tsp
  • Ginger, finely chopped 1tsp
  • Onion, finely chopped ½ medium
  • Green chilies, finely chopped – 2
  • Salt – to taste
  • Oil 1/2 tsp

Notes:

  • The number of ingredients can change as per the number of people being served.
  • If you like you can change the style and make modifications to the mentioned ingredients and recipe.

Directions:

  1. Heat 1 cup of water in a pot. Chop all the greens. When the water comes to a boil, add the chopped greens.
  2. Add 1 finely chopped green chilly, press a little, cover, and cook for 20-25 minutes or till the greens become soft.
  3. Remove pot from heat and churn all the greens.
  4. Add the oatmeal and mash as you mix. Heat oil in a nonstick pan, add ginger and mix well. 4Add remaining finely chopped green chilies and saute.
  5. Add onions and saute. Transfer the saag from the earthen pot to the pan. Cook for 15-20 minutes. Add salt and mix well.
  6. Transfer into a serving bowl, garnish and serve hot.
