This recipe is curated to provide numerous health benefits while keeping calories to a minimum. It features powerful, nutritious and simple ingredients.
Ingredients:
- 80g paneer (cottage cheese), cut into cubes
- 1/4 cup plain yogurt (low-fat)
- 1 tbsp lemon juice
- 1 tbsp tikka masala
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- 1/2 tsp ginger-garlic paste
- 1/2 tsp oil / ghee
- Salt to taste
- 1/4 cup chopped bell peppers
- 1/4 cup chopped onions
- 1/4 cup chopped tomatoes
Directions:
- Prepare the marinade by mixing yogurt, lemon juice, tikka masala, turmeric powder, red chili powder, cumin powder, coriander powder, ginger-garlic paste, and salt in a bowl.
- Add the paneer cubes to the marinade, ensuring they are well coated. Marinate for at least 30 minutes.
- Preheat your grill or oven to 200°C (390°F).
- Thread the marinated paneer cubes, bell peppers, onions, and tomatoes onto skewers.
- Brush the skewers with 1/2 tsp oil and place them on the grill or in the oven.
- Grill or bake for 15-20 minutes, turning occasionally, until the paneer is cooked and has a slight char.
- Serve hot, garnished with fresh coriander and a wedge of lemon.
