PANEER TIKKA

This recipe is curated to provide numerous health benefits while keeping calories to a minimum. It features powerful, nutritious and simple ingredients.

Ingredients:

  • 80g paneer (cottage cheese), cut into cubes
  • 1/4 cup plain yogurt (low-fat)
  • 1 tbsp lemon juice
  • 1 tbsp tikka masala
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/2 tsp ginger-garlic paste
  • 1/2 tsp oil / ghee
  • Salt to taste
  • 1/4 cup chopped bell peppers
  • 1/4 cup chopped onions
  • 1/4 cup chopped tomatoes

Directions:

  1. Prepare the marinade by mixing yogurt, lemon juice, tikka masala, turmeric powder, red chili powder, cumin powder, coriander powder, ginger-garlic paste, and salt in a bowl.
  2. Add the paneer cubes to the marinade, ensuring they are well coated. Marinate for at least 30 minutes.
  3. Preheat your grill or oven to 200°C (390°F).
  4. Thread the marinated paneer cubes, bell peppers, onions, and tomatoes onto skewers.
  5. Brush the skewers with 1/2 tsp oil and place them on the grill or in the oven.
  6. Grill or bake for 15-20 minutes, turning occasionally, until the paneer is cooked and has a slight char.
  7. Serve hot, garnished with fresh coriander and a wedge of lemon.
