GRILLED CHICKEN AND CILANTRO PESTO

Ingredients:

  • Boneless chicken – 50 g
  • Lime juice -1 tsp, (alter as per taste)
  • Low sodium soy sauce- 1 tsp
  • Oil – ½ tsp
  • Salt as per taste
  • Chilli powder – ½ tsp (alter as per taste)

Notes:

  • The number of ingredients can change as per the number of people being served.
  • If you like you can change the style and make modifications to the mentioned ingredients and recipe.

Directions:

  1. Whisk lime juice, soy sauce, oil and chilli powder in a large bowl. 
  2. Marinate the chicken and keep it aside. 
  3. Preheat grill to medium-high. Meanwhile, place cilantro, sesame seeds and the reserved marinade in a grinder and process until fairly smooth. Oil the grill rack. 
  4. Grill the chicken until cooked and no longer pink in the middle, about 2 minutes per side. 
  5. Serve the chicken with the cilantro-sesame pesto.
