Ingredients:
- Onion finely chopped- ½
- Fresh ginger minced- ½ tsp
- Ground cumin- 1/2 tsp
- Minced jalapeño- ½ tsp [ If needed ]
- Egg whites- 3 Fresh
- cilantro chopped- 1 tsp
- Tomato
- Salt- as per taste
- Oil- 1 tsp

Directions:
- Heat oil in a non-stick pan add onion, ginger, and cumin; stir-fry until onion is just softened, about 2 minutes.
- Add tomato and jalapeño pepper; stir-fry 2 minutes longer. Beat eggs, cilantro and salt in medium bowl until blended.
- Pour over mixture in skillet. As eggs begin to set, gently pull the eggs across the pan with an inverted turner, forming large soft curds. Continue cooking – pulling, lifting, and folding eggs – until thickened and no visible liquid egg remains. Do not stir constantly. Serve immediately.
